Many people regard Kingfish as a strong-flavored, oily fish. Not with this recipe. It completely does away with any fishy smell or taste.

- Lemon Juice
- Salt & Pepper
- Aluminum Foil
- 4 Kingfish Steaks
- Butter or Margarine
- Half a medium Onion
- 2 Large Cloves of Fresh Garlic
Preheat oven to 350 degrees
Cut your Kingfish into 1-inch thick Steaks.
Lay out 2 pieces of Foil big enough to each wrap two of the steaks for baking. Salt & Pepper to taste on both sides, then lay two Steaks in each piece of Foil.
Slice the Onion into small slivers (julian),
and chop the Garlic finely.
Spread a pad of butter onto the top of each Steak. Evenly distribute the fresh Garlic directly onto the surface of the Steaks, and then place the Onions on top.
Add a splash of Lemon Juice to each steak, wrap up the steak in the Foil and close the edges. Place in the oven and cook for 20 to 30 minutes depending on your oven.
Check it half-way through for doneness!
This recipe will effectively remove any fishy flavors you might have tasted by just broiling the Kingfish. But, remember that no matter what recipe you use if you dont ice Kingfish down immediately after catching, the only way to remove that flavor is by smoking it!
